2 pounds top sirloin steak
6 Tablespoons butter
½ cup chopped green onions
1 Tablespoon Dijon mustard
2 Tablespoons Worcestershire sauce
2 Tablespoons fresh lemon juice
¼ cup chopped parsley
4 - 6 slices Panera Three Cheese pan bread, thickly sliced
Preheat oven to 400 degrees F. Place the bread slices on a baking sheet and toast in the oven for 5 or 6 minutes. Cut crosswise making four toast points per slice. Set aside.
Mix together the mustard, Worcestershire sauce, and lemon juice in small bowl. Set aside.
Cut meat into thin strips (¼-inch). Melt butter in heavy skillet or wok. Sauté the steak in butter for 2-3 minutes until the strips lose most but not all of their pink color. Remove steak from pan and set aside. Add onions to pan and sauté until transparent. Add mustard, Worcestershire, and lemon juice to onions. Stir well and add meat back to the pan. Reheat quickly.
To serve, place 4 toast points on plate. Top with sirloin and garnish with fresh parsley. Serve immediately.
This entrée is a great main-course open-faced sandwich.
