Walnut-Crusted Salmon

Fish is important when it comes to having a healthy diet.  St. John Dietician Julie Pryer and News On 6 reporter Rick Wells share a recipe for Walnut Crusted Salmon.

Ingredients:
1 1/2 lb salmon fillet, skinned
2 Tablespoons balsamic vinegar
2 Tablespoons all-fruit apricot jam
4 Tablespoons dried bread crumbs
1 teaspoon freshly grated ginger root
Pepper (for seasoning)
Salt (for seasoning)


Directions:
1. Preheat oven to 400°F. Coat a baking sheet with non-stick cooking spray.
2. Combine the bread crumbs and walnuts in a bowl and set aside.
3. Mix the jam, vinegar and ginger root in a small bowl.
4. Use the salt and pepper to season the salmon. Use a brush to spread the jam mixture onto the salmon. Then, coat both sides evenly with the walnut mixture, and put extra breading over the top.
5. Place the salmon on a baking sheet and bake until it flakes easily with a fork, typically 15-20 minutes.

Yield: 4 servings

Nutrient information per serving: 378 calories, 23 grams fat, 3.5 grams saturated fat, 125 mg sodium, 12 grams carbohydrates, 1 grams fiber, 31 grams protein.
