Ingredients:
5 lbs Red Potatoes, cut lengthwise
3 cups Olive Oil
1 1/2 cups Lemon Juice
2-3 tbsp Oregano
2 tbsp Coarse Black Pepper
Wash and cut potatoes. Preheat oven at 350 degrees.
Wisk olive oil and lemon juice. Add oregano and pepper.
Place cut potatoes in a baking dish and cover them with
the oil-lemon juice mixture. Cover with aluminum foil
Bake 90 minutes at 350 degrees or until they reach desired tenderness.
