Ingredients:
½ cup bacon drippings
½ cup onion (diced)
½ cup bell pepper (diced)
2 cups breaded okra
1 cup yellow squash
1 cup corn
Salt and pepper to taste
Directions:
Saute onions and peppers with vegetable oil. Remove from skillet. Saute fajita chicken in same skillet with oil. Remove from skillet.
Saute corn and squash in same skillet. Remove, Fry okra in the skillet until golden brown.
Add salt, pepper and garlic powder.
When okra is done, add all ingredients to the skillet and heat to the desired temperature.
This traditional Ozark Mountain recipe features a delicious blend of garden vegetables -
all cooked in one skillet! Serve it up with stir-fried chicken tenders for a complete meal.
