Sun Dried Tomato Hummus

Sun Dried Tomatoes:

2 cups        Sun Dried Tomatoes
1 1/2 cups  Boiling Water
1/2 cup       Extra Virgin Olive Oil

Step 1:  Place the tomatoes and the hot water in a bowl for 20 minutes until soft, then drain out the water. Place the tomatoes in a food processor and add the oil, puree until smooth. Reserve for dip.

Hummus:

2 cups    Garbanzo Beans (Rinsed)
2 Tbl       Tahini - Ground Sesame Paste
2 Tbl       Lemon Juice
1 ½ tsp  Chopped Garlic
¼ cup     Cold Water
1 ½ tsp   Kosher Salt
2 tsp       Dried Oregano
2 Tbl       Extra Virgin Olive Oil
½ cup     Sun Dried Tomato Puree
2 Tbl       Chopped Parsley

Step 1: Place first seven ingredients into a food processor and turn on. While the machine is running, drizzle the oil in until combined.

Step 2: Add the Sun Dried Tomatoes and mix until combined. Scrape down the side of the bowl to make sure all ingredients have been mixed well.

Step 3: Add the chopped parsley and mix again until just combined.
