1-2 pork tenderloins

Teriyaki marinade

1 cup plum jam

2 TBS. ketchup

1 TBS. vinegar

2 TBS. brown sugar

Pinch of ginger

Marinate pork loin in teriyaki marinade overnight. Bake in oven at 350 degrees for 30 minutes in glass baking dish, basting with teriyaki. While baking, heat all other ingredients over stove top until hot and well blended. After first 30 minutes of baking, cover tenderloin with plum sauce and bake, or grill, for 30 more minutes (or until internal temperature of meat is 175 degrees), basting with plum marinade. Save some plum sauce to serve with the pork tenderloin. Enjoy!

A great side dish to go with the Pork Tenderloin:

Strawberry Spinach Salad

Fresh, baby spinach

Sliced strawberries

Sliced almonds

Feta cheese

Raspberry Balsamic Vinaigrette
