Yokozuna's Tom Yum Soup

Tired of the same old boring chicken and noodle, consider adding a bit of Asian flair with a new recipe. Leah Eller with Yokozuna offers up a recipe for Tom Yum Soup.

8 oz shallots, minced

1/4 cup garlic, minced

3/4 oz ginger, minced

1 1/2 oz lemon grass, cut into 2 inch pieces

10 each kaffir lime leaves, finely minced

1 TBS red pepper flakes

1/2 oz galangal root, sliced

*In a large soup pot , saute the above ingredients in a small amount of canola oil, until well sweated.  Add 1 gallon of chicken stock and simmer for 20 minutes.

 2 tsp chili sauce

1 tsp shrimp paste

1/4 cup fish sauce

1/2 cup light soy sauce

2 oz palm sugar

1/4 cup tomato paste

1 oz tamarind paste

*Add ingredients to simmering soup.  Continue to simmer for 1/2 hour.  Remove lemon grass and galangal root before serving.

Garnish with chopped green onion, shitake mushrooms, cilantro sprigs & lime wedge
