Pulled Pork With Zesty Slaw On Polenta
One pork butt, smoked your favorite meat rub
Chopped red and green cabbage
Chopped carrots and onion (or slaw mix)
Your favorite slaw dressing with a tablespoon of your favorite bbq sauce or your meat rub added.
Box of polenta (follow recipe on box for frying – you can cut it in any shape you want)
One medium onion sliced and caramelized.
Pork butt should be smoked between 6-8 hours. After pork is done, let rest, than pull it into shreds.
Mix your slaw ahead of time, preferably the night before. You can also caramelize your onions the night before also.
Take one onion (red) thinly slice put in pot over low-medium heat with half stick butter. Do not let brown!
Cook onions for 2-3 hours (you don't have to add the onions to this recipe if you don't want to).
Add pork on top of fried polenta, than pork and top with slaw and onions (if you chose to use onions).
Top with a drop of BBQ sauce.
If you don't like polenta, you can use tortilla chips.
