Beef brisket: Brine beef brisket in juniper berries, cloves, cinnamon stick, black peppercorns and bay leaves. Boil in water for 2-3 hours with pickling spices. Cool and slice thin.
Brussels sprout kraut: Sliced bacon, shaved brussels sprouts and apple cider vinegar. Saute bacon, add shaved brussels sprouts and caramelize, add apple cider vinegar and reduce, season with salt and pepper.
Cold smoked Swiss Cheese
1 cup Aioli
1/2 c ketchup
1/4 c Srircha
Dash salt and pepper
