Turkey, Cheese, and Salsa

1 Tortilla or flatbread

3 oz Turkey

2 oz Shredded Monterey Jack Cheese

¼ cup salsa

½ avocado

Preheat an oven to 350°F. Place a flour tortilla on a baking sheet and sprinkle shredded Monterey jack cheese over the top. Bake until the cheese melts, about 5 minutes. Arrange turkey slices over the cheese and top with a few spoonfuls of salsa and/or mashed avocado. Roll up the tortilla into a tight cylinder. Trim the ends and then cut the cylinder crosswise into slices.

Margareta Pizza

1 flatbread

½ Medium Tomato Sliced

2 Tbsp. Balsamic Vinaigrette dressing

½ cup shredded mozzarella

6 Small fresh Basil leaves

Place flatbread on a cookie sheet and top with cheese, tomato and basil. Bake at 350 for four minutes. Remove from heat and roll up the flatbread into a tight cylinder. Trim the ends and then cut the cylinder crosswise into slices. Drizzle with Balsamic.

Ham and Cheese

1 Tortilla or flatbread

3 oz Ham

2 oz Shredded Cheddar Cheese

2 Tbs Mayo mixed w/ 1 teaspoon of dried herbs of choices: basil, oregano, parsley, dill

Spread a flour tortilla with a thin layer of herbed Mayo. Add a layer of sliced ham and sprinkle with shredded cheddar cheese. Transfer to a baking sheet and bake at 350°F to melt the cheese, if you like. Roll up the tortilla into a tight cylinder. Trim the ends and then cut the cylinder crosswise into slices.
