Strawberry Basil Lemonade Popsicles

Dietitian Stephanie Harris with Hillcrest Hospital South has a recipe for do-it-yourself, sweet, but sugar free popsicles.

• ½ cup fresh lemon juice

• 2 cups fresh strawberries

• 6 fresh basil leaves

• 1 ½ cups water

• Liquid stevia to taste

Directions:

In a food processor, add all ingredients and pulse until the berries and basil are chopped (but not smooth). Pour into 6 standard sized popsicle molds (or you can use cups and just put the popsicle sticks in a few hours after set in the freezer so they stand up) and let sit in the freezer until frozen hard or overnight. Tip: To remove from molds, run warm water over them about 30 seconds and pop out

Strawberry Basil Water

• 1 pint strawberries, sliced

• 10 fresh basil leaves, torn

• 1 lemon, sliced

• 2 quarts water

Directions:

Combine strawberries, basil and lemon in a large pitcher. Add 2 quarts water. Refrigerate at least 3 hours or up to 2 days.

Tip: Try different fruit and herb combinations, like cucumber-mint or lemon-lime and ginger.
