Ingredients for vinaigrette

1/3 cup cider vinegar

3 tablespoons honey

1/2 cup olive oil

2 tablespoons Dijon mustard

1 teaspoon dry ground mustard

salt and freshly ground black pepper, to taste

Ingredients for salad

2 pounds Brussels sprouts, thinly shaved

¼ pound bacon, cooked crisp and crumbled

½ cup thinly sliced scallions

½ cup chopped pecans

½ bunch torn cilantro

½ cup crumbled goat cheese

Whisk together vinaigrette ingredients. Alternatively use a jar with lid and shake ingredients together. Set aside.

In a large bowl, combine all salad ingredients except goat cheese. Toss well. Add vinaigrette. Toss well. Allow to sit covered at room temperature for 20 minutes to allow flavors to melds. Toss well. Sprinkle with goat cheese.
