Stuffed Pork Loin

4 thin cut pork chops

8 tbsp goat cheese

8 pieces thin sliced prosciutto

3 tbsp chopped fresh basil mixed with the zest of half of 1 lemon

2 cups italian bread crumbs

4 unwrapped toothpicks

Instructions: Pound pork chops extra thin with meat mallet. Lay out the pork chops. Two pieces of prosciutto on top of each pork chop. Place 2tbsp of goat cheese in the middle of each pork chop. Distribute bazil and lemon zest mixture evenly between the pork chops. Roll up each pork chop like a pin wheel. Then roll in italian bread crumbs. Stick with toothpick to secure pork chop. Place on greased sheet pan and bake at 350° F for 20 to 25 minutes.
