Burst Tomato & Blue Cheese Crostini

INGREDIENTS

16 oz grape tomatoes

3 tbsp extra-virgin olive oil, plus more for brushing

1 tsp sugar

Kosher salt and ground black pepper

Baguette slices

Caramelized onions

6 oz blue cheese, crumbled

DIRECTIONS

Preheat the oven to 400°.

On a rimmed baking sheet, toss the tomatoes with 2 tbsp of olive oil and 1 tsp of sugar; season with salt and pepper.
Roast for 35 to 40 minutes, shaking occasionally, until the tomatoes start to burst and are lightly browned.
Leave the oven on.

Brush (or drizzle) the baguette slices with olive oil and arrange on a large baking sheet.  Bake until lightly golden but still chewy.

To serve, top the crostini with the cheese, onions, tomatoes and any accumulated tomato juices.

TIP
Make it a heavier appetizer by adding tenderloin!
