Balsamic Root Vegetables

<p>Michelle from the OSU Extension Office shows how to make Balsamic Root Vegetables.&nbsp;</p>

Ingredients

1 Parsnip (9” long)
3 Carrots (7” long) 
1 Rutabaga (medium) 
1 Turnip (medium) 
1 Sweet Potato (medium) 
¼ C. Apple Juice, unsweetened
¼ to ½ C. Water
3 Tbsp Balsamic Vinegar
2 Tbsp Olive Oil
1 tsp Salt
½ tsp Pepper


Directions
Chop all of the vegetables into 1-inch or smaller cubes.  Toss together in a crock pot.  Mix the remaining ingredients together and pour over the vegetables.  

Turn the crockpot on low for approximately 8-10 hours. (Add more water if needed.)

Number of servings: 6
