Carrot Cake Energy Bites

- 3/4 cup Old Fashioned Oats
- 1 cup carrots, finely shredded
- 1 teaspoon ground cinnamon
- 1/2 cup dates, pitted and chopped
- 1/3 cup coconut flakes
- 1/3 cup coconut flakes reserved for rolling
- Stir together first five ingredients.
- Form dough into tablespoon size balls, dip in reserved coconut flakes, and refrigerate an hour before eating.
