Ingredients 

  • 3/4 cup Old Fashioned Oats 
  • 1 cup carrots, finely shredded 
  • 1 teaspoon ground cinnamon 
  • 1/2 cup dates, pitted and chopped 
  • 1/3 cup coconut flakes 
  • 1/3 cup coconut flakes reserved for rolling 

Preparation 

  1. Stir together first five ingredients. 
  2. Form dough into tablespoon size balls, dip in reserved coconut flakes, and refrigerate an hour before eating.
