Ingredients

  • 2 eggs
  • 1 flour tortilla
  • 2 tablespoons butter

Rancheros Sauce

  • 2 tablespoons butter
  • 3 spring onions, finely chopped
  • 2 tablespoons Guajillo chile powder (or Ancho chile powder)
  • 1 tablespoon ground cumin
  • 4 cloves of garlic, finely chopped
  • 1 cup local beer
  • 1 can fire roasted tomatoes (15.5 ounces)
  • 1 tablespoon honey
  • Salt

Directions

  1. Melt the butter in a medium saucepan.  
  2. Add the onion, chile powder and cumin, cook for 4 minutes.  
  3. Add the garlic and cook for one minute.  
  4. Add the beer and simmer to reduce by half.  
  5. Add the tomatoes and honey.  Simmer for 15 minutes.  
  6. Season to taste with salt.
  7. Heat 2 tablespoons of butter in a non-stick pan. Fry the tortilla on both sides, about 1 minute. 
  8. Remove the tortilla and cook the eggs to your liking.

Serve the eggs on the tortilla and cover with Ranchero sauce.
