Ingredients:

  • 3 T extra virgin olive oil
  • 3 T lemon juice from one large lemon
  • 1 garlic clove, minced
  • 1/2 t sea salt or to taste
  • 1/8 t pepper or to taste
  • 1 & 1/2 c cherry tomatoes, halved
  • 1 cucumber, halved and sliced
  • 15 oz chickpeas or garbanzo beans, drained & rinsed
  • 1/2 med. red onion, thinly sliced
  • 1 avocado, sliced
  • 1/4 c combination of finely chopped fresh herbs - cilantro, parsley, chives, dill)
  • 4 oz feta cheese, diced

Directions:

  1. Combine the dressing ingredients in a small bowl: olive oil, lemon juice, garlic, salt and pepper - whisk to combine or shake in small mason jar.
  2. Combine remaining chickpea salad ingredients in a salad bowl, add dressing to taste & toss to coat
