Ingredients:
3 T extra virgin olive oil
3 T lemon juice from one large lemon
1 garlic clove, minced
1/2 t sea salt or to taste
1/8 t pepper or to taste
1 & 1/2 c cherry tomatoes, halved
1 cucumber, halved and sliced
15 oz chickpeas or garbanzo beans, drained & rinsed
1/2 med. red onion, thinly sliced
1 avocado, sliced
1/4 c combination of finely chopped fresh herbs - cilantro, parsley, chives, dill)
4 oz feta cheese, diced
Directions:
Combine the dressing ingredients in a small bowl: olive oil, lemon juice, garlic, salt and pepper - whisk to combine or shake in small mason jar.
Combine remaining chickpea salad ingredients in a salad bowl, add dressing to taste & toss to coat
