Mediterranean Chop Salad

Ingredients

  • 1/3 cup Panera® Greek Dressing
  • 15 oz. can Chickpeas, drained and rinsed
  • 1 English cucumber, cut into large dice, about 1 cup
  • ¼ cup chopped pitted Kalamata olives with their juice
  • ½ small red onion, sliced lengthwise into thin strips
  • 2 large tomatoes, cut into large dice, about 2 cups

Directions

  1. Gently toss all ingredients in a large bowl.

Greek Pita Crisps 

Ingredients

  • 2 Whole Wheat Pita Rounds
  • ¼ cup Panera Bread® Greek Dressing
  • ½ cup crumbled Feta

Directions

  1. Preheat oven to 350°F
  2. Split Pitas apart and brush each inside with dressing and sprinkle with Feta
  3. Cut each round into 6 wedges and spread on sheet pan, dressing side up. Toast until edges start to brown and curl, about 10 minutes.
