Sharon Stroud with Sharon's Nourishing Kitchen is making okra with tomatoes and basil in the Cooking Corner. 

Okra with Tomatoes and Basil

10 to 12 okra

1 cup chopped fresh tomatoes

½ cup diced sweet onion

2 teaspoons extra virgin olive oil

1 tablespoon finely chopped fresh basil leaves

½ teaspoon fresh thyme leaves

½ teaspoon finely chopped fresh oregano

Pinch of Himalaya pink salt, to taste

Fresh ground black pepper to taste

 

On medium heat in a small skillet, sauté the onion and olive oil until the onion is translucent. Add okra, tomatoes and spices and gently simmer for about 10 minutes. Serves 2.
