Carrot Oat Energy Bites with Michelle Bonicelli of OSU Tulsa
3 fresh medium carrots, finely grated
1 Cup oats, 1 Cup sunflower seeds
1/2 Cup dates, finely chopped
1 tbsp. coconut oil
1 tsp. cinnamon
1/2 tsp. ginger dried
1. Mix all ingredients together.
2. Using a teaspoon form balls
3. Place on a wax paper lined cookie sheet and refrigerate for 2 or more hours. This will allow them to firm up.
Tip: Can be rolled in ground coconut or finely chopped nuts.
