Black Bean And Corn Ensalada

Whole Foods has a no-cook, healthy dish that features black beans, peppers, mango and corn. Pack it to go or serve with greens.

This dish requires no cooking and is perfect for brown bag lunches for kids of all ages. Add to greens or a salad, cooked grains, in endive or romaine leaves, or on its own as a side.

2 cans unsalted black beans
1 red bell pepper, diced
1 orange bell pepper, diced
1-2 ripe mangos, chunked
1 bunch cilantro, chopped
3 garlic cloves, minced
1 c. yellow corn kernels
4 limes
½ tsp. sea salt (optional)
½ tsp. garlic powder
½ tsp. onion powder
¼ tsp. cayenne pepper
1 Tbsp. jalapeño pepper, chopped

Rinse beans and place in large bowl with peppers, mango,
cilantro, garlic and corn. Squeeze the limes into the bowl, add
spices and mix well. Lasts in refrigerator for up to 5 days.

Serves 4-6 people.
