Ingredients:
Dressing [prepare 12 hours in advance]
1/3 cup mayonnaise
1/3 cup brown sugar
1 tbs fresh lemon juice
Slaw:
1 large green cabbage
1 large unpeeled Red Delicious apple
1 large unpeeled Granny Smith apple
1 fresh carrot
Procedures:
Mix all dressing ingredients in large serving bowl
Core apples and cut in half, removing all seeds
Julienne apples and place in dressing and mix
Julienne-chop 3 cups of cabbage and add to dressed apples
Peel, then grate carrot and add to cabbage
Mix, cover and refrigerate for at least 4 hours
Notes:
Purple cabbage can replace one cup of green cabbage for color
Golden raisins and/or tree nut pieces can been added to coleslaw
The lemon juice will prevent the apples from browning
Batch can be doubled or tripled, as needed.
