Carrot Slaw With Apples And Cherries

This delicious side dish is made with reduced-fat sour cream, so there's no need for guilt.

Ingredients

• 2 tablespoons orange juice

• 1 tablespoon lemon juice

• 1 tablespoon honey

• 1 tablespoon reduced-fat sour cream

• ¼ tablespoon pumpkin-pie spice

• ¼ teaspoon salt

• Pinch of ground black pepper

• 2 cups matchstick-cut carrots

• 1 cup matchstick-cut apples

• 1 cup dried cherries

Directions

1. In a medium bowl, whisk together orange juice, lemon juice, honey, sour cream, pumpkin-pie spice, salt, and pepper.

2. Add carrots, apples, and cherries, and toss to mix.

TIP: To switch up the flavor, replace the pumpkin-pie spice with cinnamon or apple pie spice. Or, for something more exotic, use ½ teaspoon curry powder.
