4 Puffy Taco Shells
4 Free Range Eggs
4 oz Elote Salsa
4 oz Cheddar Cheese
4 oz Cilantro Lime Crema Fresca (or Sour Cream)
6 oz Ground All Natural Pork Sausage from Natural Farms
or
6 oz Sautéed Seasonal Veggies
Directions:
Beat 4 eggs in a bowl and season with salt and pepper. Cook Sausage or sauteed
veggies in a non stick skillet. Once the sausage or veggies are cooked drain off any
unnecessary fat and add eggs on low heat. Continuously stir and add cheese and salsa
until well incorporated and eggs are completely cooked through.
Scoop egg mixture onto warm puffy taco shell and top with crema fresca.
*Puffy Taco shells can be purchased at Elote or you can make them following a recipe
for sopapillas on the back of a Masa Harina Bag (tortilla flour).
