Apples Normandy Stuffed Crepes

Serves four

2 large Fuji apples (peeled, cored, & sliced)

1/2 cup brown sugar

1/2 tsp ground cinnamon

1/2 tsp vanilla

2 oz brandy

2 tbsp whole butter

8 medium crepes

1 cup whipped cream

Melt butter in pan and add apples. Cook apples until softened and add cinnamon and sugar. Add brandy and vanilla cook until sauced. Divide apples evenly and fill crepes, two per person.

Garnish with whipped cream. Serve still warm.
