Impossibly Easy Pumpkin Pie

1 cup mashed pumpkin

1/2 cup all-purpose flour

1/2 teaspoon salt

1/2 cup sugar

1 teaspoon baking powder

1 cup evaporated milk

1 TBSP butter, softened

1 1/2 teaspoon pumpkin pie spice

1 teaspoon vanilla

2 large eggs

Whipped topping, if desired


1. Heat oven to 350 F. Grease pie plate.

2. Mix all ingredients with fork until blended. To prevent spilling, place pie plate on oven rack. Pour filling into pie plate.

3. Bake 35 – 40 minutes or until knife inserted in center comes out clean. Cool on wire rack 2 hours. Serve whipped topping. After cooling, pie can remain at room temperature up to an additional 4 hours. Cover and refrigerate.
