1 tsp. olive oil
2 T. finely chopped onion
1 Granny Smith apple, peeled and diced
3 cloves garlic, finely chopped
1 tsp. fresh thyme, chopped ( or ½ tsp. dry)
½ tsp. ground ginger
1 T. fresh sage, chopped fine ( or 1 ½ tsp. dried)
¼ tsp salt
¼ tsp. pepper
1 lb. fresh ground pork
1 egg white
Heat oil in large nonstick skillet. Add the onion and apple. Sauté, stirring often, until softened, about 3 minutes. Stir in the garlic, thyme, ginger, sage, salt and pepper. Remove from heat. Cool to room temperature.
Mix together the apple mixture, ground pork and egg white. Shape into 12 equal patties. Sauté half of the patties at a time in skillet, about 4-6 minutes per side. Or, grill on outdoor grill or on indoor grill. Serve with mustard on slices of sourdough bread.
