Serves 2 to 4
- 1 package cabbage slaw mix
- 1 small package grated carrots
- ½ cup chopped dry roasted peanuts
- 1 package ramen noodles, cooked and drained
- 2 tablespoons rice or white wine vinegar
- 2 tablespoons sesame oil
- 1 teaspoon sugar or honey
- Juice of 1 lime
- 2 cups shredded chicken (from a cooked rotisserie chicken)
Toss all ingredients together and let stand 30 minutes, tossing occasionally, before eating.
