Green Chili Chicken Casserole

1 Tablespoon canola or olive oil

1 pound chicken breast, diced

1 medium onion, chopped

1 Tablespoon minced garlic

12 corn tortillas

1 can white beans

4 oz green chili's, diced

2 cups reduced fat cheddar cheese

1 cup reduced fat sour cream

1 cup low-fat milk

1 Tablespoon cumin powder

Saute' onion and garlic in oil on medium high heat.

Add diced chicken and cook thoroughly.

Mix together the beans, green chilies, 1 cup of cheese, cumin powder, milk and sour cream.

Spray the bottom of a baking dish with vegetable spray.

Next layer the ingredients in the pan.

Begin with the sauce.

Follow with tortillas, chicken, tortillas, sauce, etc. finishing with sauce.

Top the casserole with the remaining cheese.

Bake at 350°F for 30 – 35 minutes.
