Oven-Roasted Fruit Salad With Panettone Croutons

  • 1 Panera Panettone cut into cubes to make 3 cups
  • 1 cup fresh cranberries
  • 1 orange, peeled, pith removed, and sectioned
  • 1 cup red seedless grapes
  • 2 Barlett pears or 2 Gala apples, cored and cut into 8 pieces
  • 3 Tablespoons butter, melted
  • 1 Tablespoon sugar
  • 2 Tablespoons fresh orange juice

For the Dressing:

  • 1/4 cup fresh orange juice
  • Zest from one orange
  • ¼ cup honey
  • 1/4-cup vegetable oil
  • 2 Tablespoons red wine vinegar
  • Salt and pepper to taste
  • 1 10oz. package fresh baby spinach

Preheat the oven to 300 degrees F. Put the panettone cubes on a parchment lined baking sheet. Bake until golden brown about 30-45 minutes. Remove from oven and cool.

Increase the oven temperature to 425 degrees F. Put the fruit in a large mixing bowl. Add melted butter, the 2 Tablespoons orange juice, and the sugar. Mix well. Bake until fruit is tender and is beginning to brown on the edges about 25-30 minutes. Remove from the oven and cool.

For the dressing, mix the honey, the ¼ cup orange juice, oil, and orange zest in a blender. Add salt and pepper to taste.

To serve: In large bowl place the baby spinach, roasted fruit, and panettone croutons. Mix well and dress with the salad dressing. Serve immediately.
