Cranberry Waldorf Salad with Roasted Turkey

Looking for that final dish to complete your Thanksgiving feast.  Kitchen Kimberley was in her Oklahoma Kitchen with a recipe for Cranberry Waldorf Salad.

6 c. mixed greens, torn

2 Red Delicious apples, diced

2 Anjou or Bartlett pears, diced

2 T. fresh lemon juice

3 stalks celery, sliced diagonally

1 c. walnuts, toasted

1 c. crumbled Blue cheese

1 c. golden raisins

1 c. dried cranberries

Roasted turkey, to taste, either thinly sliced or diced

Prepared Raspberry Vinaigrette, to taste

In a small bowl, toss diced apple and pear with lemon juice; set aside.  Arrange salad greens on serving platter, or in a large bowl.  Top with apples and pears.  Sprinkle all remaining ingredients except turkey on top; toss lightly or leave as a ‘composed' salad. Place turkey over top.  Serve with your favorite bottled Raspberry Vinaigrette, to taste.

Kitchen Kimberley's Tips:

  • To toast walnuts, heat on full power in the microwave, stirring every 15 seconds until they are aromatic; cool , then enjoy. 
  • This recipe is an adaptation of my ‘Raspberry Waldorf Salad'.  In the summer, this salad is delicious with fresh raspberries instead of dried cranberries, and sliced grilled chicken instead of turkey.
