1-cup fresh sugar snap pea pods
1-cup grape tomatoes, halved
2 tsp Canola oil
1 Tablespoon fresh dill weed, chopped or 1 tsp. dried dill weed
Salt and pepper to taste
Remove tips and strings from sugar snap pea pods. In a large skillet stir-fry pea pods and tomatoes for about two minutes or until peas are tender, but crisp. Stir in dill-weed. Season with salt and pepper to taste. Cover and keep warm.
Egg in the Hole
4 thick sliced bread i.e. Panera white whole-wheat or sourdough bread
4 Tablespoons unsalted butter, melted
Salt and freshly ground pepper to taste
4 large eggs
In large skillet melt the butter over medium heat. Cut or tear a 2 ½ inch hole from the center of each bread slice. Place bread slices in hot skillet. Crack an egg into the center of each bread slice. Sprinkle with salt and pepper. Cover and cook about 3 minutes. Turn bread over and cook another minute or until desired doneness. Serve immediately with Veggie Accompaniment and/or crisp bacon.
Topping for one slice of bread such as Panera Honey Wheat or Sourdough
1 Tablespoon soft butter
1-2 Tablespoons brown sugar
2 Tablespoons coconut
Mix together the butter, brown sugar, and coconut. Toast bread slice and do not butter. Cut into two pieces diagonally. Then spread each half with the topping and broil in oven or toaster oven until mixture bubbles and browns.
