3 green olives (sliced)
3 oz pico de gallo (replaces tomatores, red onion, jalapeno and cilantro)
1 oz green onions
1 oz canola oil
1/4 tsp cayenne
3 oz V-8 juice
8 oz snapper filet
In a heated medium saute pan (sprayed w/ pan release and lightly oiled), sear snapper, about 2 minutes on each side. Add V-8 juice and simmer for 2 minutes. Add remaining ingredients and serve on a bed of tomato-poblano rice. Serve immediately.
