Apple Crumb Pudding

The autumn apple crop is now available with dozens of varieties and different ways to enjoy this favorite fruit. Desserts, of course, are a favorite way.

Mix: ¾ cup evaporated cane juice (sugar), 1 ½ teaspoons cinnamon, ¾ teaspoon nutmeg.

Mix sugar mixture lightly through 6 to 7 cups sliced apples. Dot with 1 ½ tablespoons butter.

Mix with a pastry blender until crumbly: ½ cup butter, ½ cup evaporated cane juice (sugar), 1 cup plus 1 tablespoon flour.

Pour apple mixture into an 8" square baking dish. Top with crumb mixture.

Bake in a 425 degree oven for 50 to 60 minutes. Check topping after 30 minutes. If topping gets too dark, cover dish with a plain paper sack with slits into it.

Serve warm with vanilla ice cream or serve cold.
