Pork Loin Marinade With Wheat Berries

Ingredients:

Lemon Juice & zest 2 ea

Olive Oil 0.50 C

Sea or Kosher salt 2.00 Tblspn

Fresh Garlic 3.00 cloves

Directions:

Mince garlic, crush with salt using side of knife.

Add to zip top bag with zest, juice and oil, mix well

Use to marinade pork or chicken, marinade in fridge at least 2 hours.

DO NOT reuse marinade, discard after 1 use.

 

Basic Wheat Berries

Wheat Berries 2 C

Water  6.00 C

Salt & Pepper  to taste

Directions:

Wash wheat berries, cover with fresh water let soak overnight.

In the morning, rinse, and cover with 4 to 6 cups fresh water.

1 Tblspn salt, heat to medium boil and cook about 2 hours. 

The berries should be fairly soft, and some may open up.

Drain and use as risotto, or stir in cooked rice and use as the base for pilaf.

You can use wheat berries chilled in many different salads.

Store in the freezer for long term use.
