Quinoa grains 1 C
Water 3 C
Sea Salt 2 Tbl
Cucumber diced 0.5 C
Green Onion 0.25 C
Tomato diced 0.5 C
Red Bell Pepper diced 0.5 C
Yellow Bell pepper 0.25 C
Coarse grated carrots 0.25 C
Italian parsley chopped 3 Tbl
Curry powder 0.25 tsp
Fresh lemon juice & zest 0.25 C
Extra virgin olive oil 0.75 C
Salt & Pepper to taste
1. Bring water and sea salt to boil add quinoa and stirr
2. Boil about 10 to 12 minutes till grain is tender, do not over cook!!
drain then rinse in cold water, drain well.
Grains should be flakey and almost pop between the tongue and roof of your mouth
3. Add diced ingredients and mix well
4. Make dressing from lemon juice, curry, and oil.
Adjust seasoning to taste, more lemon if needed
or salt or pepper.
For a nuttier taste gently toast the quiona in a dry skillet before boiling.
