1 tsp. all-purpose flour 1 unbaked 9 inch deep dish pie shell 1/2 cup light corn syrup 3 eggs 1/4 cup sugar 3 tbsp. all-purpose flour 1/4 tsp. salt 1/4 tsp. nutmeg 3 cups peaches, peeled and cubed 1/2 cup butter, melted 1/2 cup pecans, coarsely chopped 1/4 cup all-purpose flour 1/4 cup firmly packed brown sugar 2 tbsp. butter, softened whipped cream (optional) vaniilla ice cream (optional)
Directions:
Preheat oven to 350 degrees. Sprinkle 1 tsp flour over pie shell and set aside. Combine the next six ingredients in a large bowl. Beat with a mixer at medium speed until ingredients are well blended. Stir in peaches and 1/2 cup melted butter. Pour peach mixture into pie shell. Combine the pecans, 1/4 cup flour and brown sugar in a medium bowl and mix well. Cut in 2 tbsp. butter with a pastry blender until mixture resembles coarse meal. Sprinkle over peach mixture. Bake for 45 to 50 minutes or until pie is set. Let cool completely. Serve with whipped cream or vanilla ice cream.
