Ingredients:
2 Tablespoons light ranch style dressing1 egg or equivalent egg substitute
1/3 cup yellow cornmeal
1 ounce Parmesan Cheese, grated
2 Tablespoon all purpose flour
1/4 t ground red pepper
4-6 ounce catfish fillets
Cooking Spray
4 lemon wedges
Directions:
Preheat oven to 425 degrees. Combine dressing and egg in a small bowl and stir well with a fork. Combine cornmeal, cheese, flour and pepper in a shallow dish. Dip fish in egg, and dredge in cornmeal mixture.

Coat baking sheet with cooking spray. Bake at 425 degrees for 12 minutes on each side or until lightly browned and fish flakes easily when shredded with a fork. Serve with lemon wedges.
