8 ripe avocados Juice of 1 lemon (about 3T) 1 tsp. salt Parmesan cheese 2-3 plum tomatoes 1 large bag of your favorite tortilla chips
Directions:
Place the avocado, lemon juice and salt in a large bowl and mash with the back of a large spoon or a fork until you have the desired consistency. Add extra ingredients of choice (i.e., 1 T. of Parmesan cheese, diced tomatoes, sweet white or red onion, lime juice, balsamic vinegar or chopped cilantro). Add according to your taste. Refrigerate for 30 minutes and serve with tortilla chips.
