Canadian Bacon Breakfast Squares

Ingredients:
Butter-flavored cooking spray2 C. reduced fat baking mix
1/2 C. egg substitute
1 1/2 C. low-fat buttermilk
1 pkg. (6 oz.) Canadian bacon, cut into small triangles
1 C. shredded 2% reduced-fat sharp cheddar cheese
2 T. parsley, chopped
4 green onions, diced
Directions:
Preheat oven to 350 degrees. Spray 8-inch square pan with butter flavored cooking spray. In a medium bowl, stir together baking mix, egg substitute, and buttermilk until blended; stir in remaining ingredients. Spread into pan. Spray top with butter-flavored cooking spray. Bake for 25-30 minutes. Cool in pan before cutting.
