1 c. plus 2 tbsp. all-purpose flour 2/3 c. packed brown sugar 2/3 c. granulated sugar ¾ tsp. salt 1 tsp. baking powder 1/3 c. baking cocoa ½ c. semi-sweet chocolate chips ½ c. chopped walnuts 3 eggs 2/3 c. vegetable oil 1 tsp. vanilla extract
Directions:
Preheat oven to 350 degrees. Grease a 9-inch square baking pan; set aside.
In a large bowl, mix first 6 ingredients together (flour through cocoa). Add chocolate chips and walnuts; stir to blend. In a separate bowl, beat the eggs, oil and vanilla; add to the dry mixture, stirring well. Spread batter into prepared baking pan. Bake for 34 to 38 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
Tip: This brownie recipe also makes a wonderful ‘Gift in a Jar'. To assemble, simply pour the flour into a 1-quart glass container with a tight fitting lid. On top of the flour, layer the brown sugar, salt, sugar, baking powder, cocoa, chocolate chips and nuts (do not mix). Put the lid on the jar, and then place a circle of pretty fabric over the top of the lid. Tie the fabric on with coordinating ribbon, raffia, or twine and attach the following instructions: To Prepare Brownies: In a bowl, beat 3 eggs, 2/3 c. vegetable oil, and 1 tsp. vanilla extract. Add the contents of this jar; stir well. Spread into a greased 9-inch baking pan. Bake at 350 degrees for 34 to 38 minutes or until a toothpick inserted near the center comes out clean.
