Ingredients:
Vegetable oil cooking spray
1 cup self-rising flour
3/4 cup packed brown sugar
1/2 cup quick oats
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup egg substitute
1/4 cup unsweetened applesauce
1/4 cup fat-free sour cream
1 teaspoon vanilla
3/4 cup diced tart apple
3/4 cup fresh or frozen cranberries, chopped
1/4 cup golden raisins
2 tablespoons chopped pecans
Directions:
Preheat oven to 325 degrees. Spray muffin cups with vegetable oil cooking spray. Set aside. In a large mixing bowl, combine flour, brown sugar, oats, cinnamon and nutmeg. In a medium bowl, combine egg substitute, applesauce, sour cream and vanilla. Stir in apple, cranberries and raisins. Pour wet ingredients over dry ingredients. Stir just until the dry ingredients are moistened. Spoon batter into prepared muffin cups. Sprinkle with pecans. Bake 25 minutes or until light brown. Remove from oven. Loosen muffins with a knife, turning them onto their sides. Let cool 5 minutes before serving.
