Oliveto's Crispy Chicken Sandwich

Chicken Breast 6 oz.

Seasoned Flour 1/8 cup

Buttermilk 1/8 cup

Brioche Bun 1 bun

Roasted Garlic Dill Aioli 2 Tbsp.

Dill Pickle Slices 3 slices

Roma Tomatoes 3 each

Shaved Red onions ¼ oz

Fresh Mozzarella Slices 2 slices

Pound a 6 oz chicken breast to a medium thickness. Dredge in seasoned flour, buttermilk and then back into the flour. Stack the roma tomatoes, shaved red onions and mozzarella cheese on a pan and broil until tomatoes start to wilt and the cheese becomes soft. Toast the Brioche bun and add a tablespoon of roasted garlic dill aioli to each side of the bun. Add dill pickle slices to the bottom of the bun, followed by the chicken breast. Finally, slide the tomato stack on top of the chicken breast and top with the other half of the bun. Serve with French fries or Pasta Salad.
