The Tulsa Farmers Market is in full swing and the veggies and fruits are fabulous. In the Mediterranean Tzatziki and Gyros sauces are popular on a variety of dishes. These wonderful sauces can be used on sandwiches, cooked meats, vegetables and even a base for salad dressing.
Cucumbers are low calorie and rich in vitamin K, vitamin C, magnesium and potassium. They are also rich in water, which is good for hydration during the hot summer months.
This simple sauce is easy to make and lasts for several weeks in the refrigerator.
Tasty Gyros Sauce:
1 medium to large cucumber, finely chopped
1 small sweet onion or red onion, finely chopped
16 ounces sour cream
8 ounces plain Greek yogurt
2 tablespoons chopped oregano
1 tablespoon chopped parsley
1 tablespoon dill weed
1½ teaspoons Himalaya pink salt
1 large clove garlic, minced
Combine all the ingredients in a bowl and mix well. Refrigerate for several hours to let the flavors meld.
Use as a dressing on gyros, sandwiches, and cooked meats. This makes a wonderful a dip for vegetables or crackers, and also as a salad dressing. This keeps for several week.
