Spanish Bread Tortilla

BOK and COX Business Center Executive Chef Devin Levine joined News On 6 with another great recipe on Wednesday. This time we are making Spanish Bread Tortilla and we'll show you how easy it is to make at home.


  1. 6 large                 Eggs
  2. ½ cup                   Heavy Cream
  3. 1 cup                    Artisan Country Bread, cut into cubes
  4. 1 tabl                    Spanish Paprika
  5. 1 tabl                    Garlic, minced
  6. 4 tabl                    Extra Virgin Olive Oil
  7. ½ cup                   Manchego, grated
  8. ¼ cup                   Garlic Aioli
  9.                                Scallion, chopped
  10.                                Sea Salt & Black Pepper to taste


Beat eggs and cream together and set aside; heat olive oil in non-stick skillet, add garlic, bread crumbs & paprika and toss to lightly brown in skillet. Add egg mixture, Manchego and scallions and cook on medium heat to form an omelet. When starting to set, turn over in pan to continue to cook other side; season with sea salt & pepper; fold in half and sprinkle additional Manchego on top; place on plate and top with a dollop of garlic aioli, additional chopped scallions and sprinkle of paprika.
