KVOO's Amber has a delicious recipe for sweet potato chickpea coconut curry.
Heat oil in a skillet over medium heat and cook onion, garlic, and ginger about 5 minutes (or until softened). Add chickpeas, tomatoes, coconut milk, and sweet potato. Bring to a boil, reduce heat to low and simmer 15-20 minutes. Season with garam masala, cumin, turmeric, Japanese 7 spice, and salt. Simmer another 5-10 minutes. Add arugula/spinach just before serving.
