Erin Barnhart with Panera Bread joins us in the Cooking Corner with a great recipe for Vegetable Caesar Pasta Salad.
Ingredients
· 8 oz whole wheat bow tie pasta
· ½ cup grated Asiago cheese, extra for garnish
· ½ cup Panera® Caesar Dressing
· 3 cups diced yellow squash and zucchini, mixed
· 2 packed cups fresh baby spinach
· 16oz package grape tomatoes, halved
· ½ lemon
· Kosher salt and freshly ground black pepper, to taste
Directions
1. Cook pasta according to package directions and drain.
2. In large bowl, toss pasta with cheese and ¼ cup dressing. Add squash, spinach, and tomatoes and gently toss to combine.
3. Using a fine grater, zest lemon-half and juice over salad, and toss. Add salt and pepper to taste.
4. Chill for at least 30 minutes or until ready to serve. Before serving, toss with remaining ¼ cup dressing.
