Welcome to the Cooking Corner! Devin Levine is the Executive Chef for the BOK and cox business center and today he's going to show us how to make Cajun Shrimp Pasta!
Ingredients
• 2 tablespoon olive oil
• 2 tablespoon butter
• 1 pound raw shrimp deveined, cleaned, tail removed
• 2 tablespoons Cajun seasoning
• 1 cup heavy cream
• ½ cup parmesan cheese
• 1 tablespoon kosher salt
• 8 ounces farfalle pasta, cooked & drained
• ½ cup chicken broth, if needed to thin
• ¼ cup scallions, chopped
Instructions
1. Pre-cook pasta to al dente doneness; drain in a colander.
2. Heat a large skillet over medium-high temperature. Add butter and olive oil and melt. Add shrimp and cook until starting to firm; add Cajun seasoning and toss to coat.
3. Add heavy cream to pan; allow the cream to bubble. Reduce heat to low and stir in parmesan cheese to melt. Add cooked pasta and stir to combine. If sauce must be thinned, add a little chicken stock
4. Transfer to a serving bowl and garnish with scallions and serve with toasted French baguettes.
