Liz Taliaferro from Panera joined News On 6 at noon to show us how to make a Lemon Herb Chicken Salad Sandwich.

Ingredients

  1. 2 tbsp. Panera Mediterranean Lemon Vinaigrette Dressing
  2. 2 tbsp. Greek yogurt, plain
  3. 1/2 tsp. dill, finely chopped
  4. 1/2 tsp. tarragon, finely chopped
  5. 1/4 tsp. salt
  6. 1 pinch pepper
  7. 4 oz. chicken breast, cooked, chilled, diced ¼-inch
  8. 2 Slices Panera 100% Whole Wheat Grainy Whole Grain Bread
  9. 1 tomato, small, sliced thin
  10. 2 leaves Bibb lettuce

Steps

  1. In a small bowl, whisk together dressing, Greek yogurt, dill, tarragon, salt and pepper until ingredients are blended together.
  2. Add chicken to bowl and gently toss until combined.
  3. Toast slices of bread to desired doneness. Assemble sandwich with chicken salad, tomatoes and lettuce.

  1. For the chicken, bake in the oven at 400°F for 22 to 26 minutes depending on the size of the chicken breast or until it reaches 165°F; chill before using in recipe. You can also use leftover plain grilled chicken or rotisserie chicken for this recipe.
  2. 2% or low-fat plain Greek yogurt works best in this recipe. If using non-fat yogurt, choose a brand that has a thicker consistency.
  3. Baby arugula is also great on this sandwich and adds a peppery bite.
